Every summer my mom makes some type of preserves from fruits I buy from the farmer's market. Last summer I bought a bunch of peaches from our local farm stand. The peaches were tart and sweet and juicy. I ate several peaches--peeled and sliced with a sprinkling of salt. That's a truly southern thing to add salt to tart fruit. I love it.
After a few days there were too many peaches to be eaten, so before they went bad, my mom made a few jars of peach preserves from the remaining peaches. Those preserves were so tasty. They are great on toasted buttered bread and washed down with a cup of hot tea.
